A good day, despite the allergies. Despite feeling sniffly, I managed to get through the day and post the latest greatest on the blog. For a change, I don't have to drag myself home and through some food together. Mum's got that covered this evening, which I'm grateful for. Besides, what she's making for dinner is better than what I have planned for myself. Friday evening, I realized how much I depend on mum's cooking. I came to this realization when I was preparing this paltry dinner for myself. Okay, I wasn't that hungry but I still appreciate a good home cooked meal. I know she's getting older and preparing multi-course feasts are harder for her. She has me taking over some of the chef duties. I can manage my way around the kitchen. Sometimes it's a real struggle to cook because I have to accommodate a kosher kitchen. The struggle is finding ingredients that will pass muster. Often that means anything non-dairy or a relatively close substitute. Recently, I decided to bake a banana cake from scratch. One of the ingredients was shortening--this was in a kosher cook book. I read shortening, I (and mum) think lard or Manteca (a common ingredient in Mexican cooking). Not going to work here. Good old Google came to the rescue. My favorite substitution option was whiskey or bourbon for vanilla. I'm very good with that. Change of subject, after nearly a week, I'm loving my new phone. Okay, it's the exact same phone as I had before but it holds a charge longer and performs better. It should hold me until the iPhone 10 comes out. Okay, time for dinner.
